New column: MANGIONA with Caitlin Levin #1 Avo and Eggs Breakfast Pizza

Caitlin Levin is a chef and a food stylist and also happens to be one of my best friends. I’m welcoming her as a new columnist here–she will be sharing yummies with *all of us* a few times a month (she’s been sharing yummies with me since 1999!)
We are calling the column Mangiona because she and I met on our year abroad in Italy.  The word Mangione translates to the female form of ‘big eater’ in Italian–something that I have been called on more than one occasion–especially when Caitlin’s cooking is involved :P

I hope you enjoy the recipes–we will focus on easy, healthy mostly vegetarian fair around here–cause that’s just my steeze! I’m already craving this l’il snack–and Caits knows I need my Omega 3’s and proteins right now, so this breaky is right up my pregnant lady ally!
Please help me in giving Caitlin a very warm welcome.
Take it away Caits!:

Quick, healthy and easy snacks is my starting point this week….
Avo + Egg Brakfast Pizza

Here’s what you’ll need:

1. Greek or pocketless pita, or any kind of flat bread
2. Lemon
3. Ripe avocado
4. Organic egg
5. Sea salt, pepper, chili flakes, cumin, cumin seed, extra virgin olive oil

Here’s what you do:

Toast pita until crisp, mash avocado and spread on pita, drizzle with a dash of lemon, olive oil and spices, place egg cooked to your liking on top and serve.
Best as healthy breakfast, afternoon snack or Sunday night dinner!

Add prosciutto or a sprinkling of feta over the top for a richer snack.

  20. Two of my all-time favourite ingredients as a pizza? What a fab idea! I love sunny side up and a good ripe avocado…it’d be great with a freshly baked flatbread I’m thinking..that’s my next aim: to be able to make a super aromatic flatbread for general snacking purposes. LOVE – yummm!

    Whoa! First, this pizza looks delish – two of my favorite things, avocado and pizza, there’s no way this could be bad! Second, Justina, did you make the graphic for this post? Whoever did it, they used my font! I am very new to blogging and creating, so when I made and shared a on my blog and with dafont.com, I had no idea that people would actually use it! I follow Joanna Goddard’s blog, A Cup of Jo, and when I clicked the link to come to this post, I almost fell out of my chair when I saw my font on your page! So far, I’ve only ever seen my font on my own stuff and other teachers’ creations, so that’s why I was so surprised to see it being used elsewhere! I’m so glad I clicked on the link, not only because I now have that recipe, but it really made my day to see my handwriting actually being used and then for me to stumble upon it, that’s crazy! Probably not a big deal for most people, but it felt really awesome to me! :)

    I’ve kind of made this twice now. The first time using a no yeast pizza dough recipe I have for the base. The second time using a Texas Style Tortilla recipe. Both worked well for the bottom.
    Then making a guacamole with seasoning and tomatoes inside. Then some smoked salmon slices and feta with the fried egg on top. It’s really good and thanks for the idea that has launched this wonderful “Tortizza” my husband and I now love.

    I wish this would stop rolling up on my vegetarian meal ideas app, as eggs are quite distinctly not vegetarian. Eating chicken embryo is no better than veal or suckling pig. Tut tut. Perhaps a lovely omnivore meal, but has no business masquerading as vegetarian, nor do folks who eat eggs. It’s like Jews celebrating Christmas. Nonsense.
